So, what is nitrate de sodium?
Sodium nitrate is a white crystalline compound used as a food preservative and color fixative. It is a source of nitrate ions, which can be converted to nitrite in the body. Nitrate de sodium is commonly used in cured meats, such as bacon, to prevent the growth of harmful bacteria and prolong shelf life. It has also been linked to health concerns, such as an increased risk of cancer, if consumed in excessive amounts. Despite its widespread use, some countries have placed restrictions on its use in certain foods.
