They play several roles, including as a pH adjuster, a stabilizer, and a texture enhancer. Sodium phosphates can be found in a wide range of food products, from canned meats and seafood to cheese and bakery goods. They are also used in some sports drinks to help maintain electrolyte balance in the body. However, excessive consumption of sodium phosphates may have negative health effects, such as increased risk of kidney disease and high blood pressure.
