So, what is gluconodeltalactone?
Glucono delta lactone (GDL) is a natural ingredient commonly used in the food industry as a sequestrant, acidulant, and leavening agent. It is a white, odorless, and crystalline powder derived from gluconic acid, which is produced by the fermentation of glucose. GDL has a slightly sweet taste and is often used as a substitute for traditional acids such as citric and lactic acid. It is commonly found in baked goods, dairy products, and beverages, and is also used as a preservative due to its antimicrobial properties. GDL is considered safe for consumption and is approved for use in many countries around the world.
