So, what is glucose .oxydase?
Glucose oxidase is an enzyme commonly used in the food industry to convert glucose into hydrogen peroxide and gluconic acid, which can help control bacterial growth and increase shelf life. It is often added to baked goods and dairy products as a preservative or as a flavor enhancer due to its ability to break down sugars and release natural flavors. Glucose oxidase is also used in medical applications, such as glucose monitoring devices for diabetics, and in research as a tool to measure glucose levels in biological samples.
