Glucose syrup is a sweetener made from hydrolysis of starch. It consists mainly of glucose, maltose, and higher saccharides, and has a consistency ranging from liquid to semi-solid. The resulting syrup is often used in food products as a thickener, sweetener, and texturizer. It can also be used in the manufacturing of candies, jams, and beverages. Due to its high sugar content, it is commonly used in baking and confectionery. Glucose syrup is considered a healthier alternative to regular granulated sugar due to its lower glycemic index, making it suitable for people with diabetes.
