Extracted from the seeds of the Caesalpinia spinosa tree, which is native to South America, gomme tara is prized for its high viscosity and stability, making it an ideal ingredient for a wide range of products including soups, sauces, dressings, and desserts. Gomme tara is vegan, gluten-free, and a popular alternative to other thickeners like xanthan gum and guar gum.
