So, what is gorgonzola cheese?
Gorgonzola cheese is a soft and creamy blue cheese with a tangy and pungent flavor. It is made from pasteurized cow's milk and has distinctive greenish-blue veins running through it, which are created by the mold Penicillium roqueforti. The cheese is aged for around 3 to 4 months before it is ready to be consumed. Gorgonzola cheese is commonly used in Italian cuisine, especially in pasta dishes such as risotto and gnocchi. It also pairs well with fruits like pears and figs or served with crackers and wines like Chianti or Pinot Noir.
