So, what is gousse de vanille épuisée?
"Gousse de vanille épuisée" is a culinary term that refers to a spent vanilla bean. Once the tiny black seeds inside have been scraped out and used in cooking or baking, the outer pod or "gousse" is left behind. Despite being spent, these empty pods still have a delightful aroma and can be added to a variety of dishes for added flavor. They're often used to infuse milk or cream for custards or ice cream, or simmered in simple syrup for a fragrant addition to cocktails.
