So, what is hydrolyzed vegetablé protein?
Hydrolyzed vegetable protein (HVP) is a flavor-enhancing ingredient derived from soy, corn, or wheat. It is produced by breaking down the protein into its component amino acids using a process called hydrolysis. HVP is commonly used in processed foods, such as soups, sauces, and snacks, as a substitute for meat or to enhance umami flavors. HVP is a natural source of glutamic acid, which is responsible for the savory taste known as umami. It is also a popular ingredient in vegetarian and vegan foods because of its ability to enhance flavor. HVP is often added in small amounts, as it is a potent flavor enhancer.
