Inosinato dissódico, also known as disodium inosinate, is a food ingredient that enhances the umami flavor of food. It is commonly used in processed foods, such as potato chips, instant noodles, and seasoning blends. Inosinato dissódico is a white crystalline powder that is soluble in water and has a slightly salty taste. It is derived from the nucleotide inosine and is often used in combination with other flavor enhancers, such as monosodium glutamate (MSG), to create a savory, meaty taste. While it is generally recognized as safe by the FDA, some individuals may be sensitive to inosinato dissódico and experience adverse reactions.
