So, what is invert cane sugar?
Invert cane sugar is a natural sweetener that is commonly used in baking and confectionery. It is made by heating and mixing cane sugar with water and a small amount of acid, such as lemon juice or cream of tartar. This process breaks down the sucrose in the cane sugar into its component sugars, glucose and fructose, which results in a sweeter and more concentrated product than regular cane sugar. Invert cane sugar is often preferred over regular cane sugar in recipes because it improves texture and enhances the flavor of baked goods, while also prolonging their shelf life.
