It is a sodium salt of erythorbic acid, which is a stereoisomer of ascorbic acid (vitamin C). This white crystalline powder is highly soluble in water and exhibits excellent oxidative stability, making it an ideal choice for preserving the color, flavor, and texture of processed foods such as cured meats, canned fruits, and frozen vegetables.
