So, what is l-cystein?
L-cysteine is a non-essential amino acid that is found in high-protein foods such as chicken, turkey, and eggs. It is also commonly used as an ingredient in food manufacturing as a dough conditioner, helping to improve texture and increase shelf life. L-cysteine is often derived from human hair, duck feathers, or hog hair, but can also be synthesized in a laboratory. Despite concerns over its sourcing, the FDA has approved L-cysteine for use in food products and it remains a popular ingredient in breads, pastries, and other baked goods.
