So, what is mélasse de?
Mélasse de is a thick, dark syrup that is extracted during the process of refining sugar cane. It is made by boiling sugar cane juice until it thickens and the sugar crystallizes, after which it is separated from the crystals. Mélasse de is a natural sweetener that is rich in minerals such as iron, calcium, and magnesium, making it a healthy alternative to refined sugar. It has a complex, slightly bitter flavor with notes of caramel and molasses, and is often used in baking, marinades, and sauces to add depth and complexity to dishes. Mélasse de is also commonly used in Caribbean and Southern cuisine as a key ingredient in dishes such as gingerbread, BBQ sauce, and rum cake.
