So, what is mesi?
Mesi is a type of sweetener that is popular in Haitian cuisine. It is made from squeezing the juice out of sugarcane and then boiling it down until it becomes a thick syrup. Mesi has a deep brown color and a rich, molasses-like flavor that is both sweet and slightly bitter. It is commonly used as a topping for pancakes, waffles, and other breakfast foods, as well as in baked goods and desserts. Aside from its culinary uses, mesi also has medicinal properties and is believed to help with digestion and boost energy levels.
