This ingredient is derived from edible sources of fat, such as vegetable oils, and is used to improve texture, consistency, and shelf life of baked goods, dairy products, margarine, and other processed foods. As an emulsifier, mono- and diglycerides of fatty acids help create a smooth and stable texture in food products and prevent separation or clumping.
