So, what is monodiglyceride?
Monodiglycerides are a type of food ingredient that are commonly used as an emulsifier in processed foods, such as baked goods, margarine, and ice cream. They are made by combining a fatty acid with glycerol, resulting in a molecule with one or two fatty acid chains attached. Monodiglycerides are effective emulsifiers because they have both hydrophilic (water-loving) and hydrophobic (water-fearing) properties, which allows them to help combine and stabilize ingredients that would normally separate, such as oil and water. Additionally, monodiglycerides can improve the texture, flavor, and shelf life of food products.
