Monosodium glutamate, commonly known as MSG, is a flavor enhancer that is widely used in Asian cuisine. It is a white crystalline powder derived from the natural fermentation of certain vegetables and grains. MSG is known for its ability to enhance umami, which is one of the five basic tastes.
