It is the sodium salt of benzoic acid and is produced synthetically on an industrial scale by neutralizing benzoic acid with sodium hydroxide. The benzoic acid used in this synthesis is typically derived from toluene, a petroleum byproduct. Manufacturers utilize this compound to prevent the growth of mold, yeast, and bacteria in acidic environments, and it commonly appears in soft drinks, fruit juices, salad dressings, condiments, and pickled goods.
