Nítrito de sodio, also known as sodium nitrite, is a chemical compound that is commonly used as a food preservative. It is a white to slightly yellowish crystalline powder that is soluble in water and has a slightly salty taste. It is used primarily in the curing of meats such as bacon, ham, and hot dogs, as it prevents the growth of bacteria and helps to preserve the meat's color and flavor. While it is effective in preserving food, high consumption of sodium nitrite has been linked to health concerns, such as an increased risk of cancer and cardiovascular disease.
