It is made up of multiple phosphate units linked together and is a white, odorless powder that easily dissolves in water. Polyphosphate sodique can be found in a variety of foods such as canned meats, seafood, and baked goods. While it is generally recognized as safe by regulatory authorities, excessive consumption may cause adverse effects such as gastrointestinal distress.
