So, what is povidone?
Povidone is a versatile food ingredient used primarily as a binder, thickener, and emulsifier. It is a water-soluble polymer made from the monomer N-vinylpyrrolidone. Povidone is commonly used in supplements, tablets, and granular formulations, where it enhances the solubility of poorly soluble drugs. It is also used in the food industry to prevent caking and clumping in powdered products such as spices, sweeteners, and baking mixes. Moreover, povidone acts as a stabilizer, preventing oxidation in oils and fats, thus extending the shelf life of packaged foods.
