Proso, also known as proso millet, is a gluten-free cereal grain that has been cultivated for thousands of years. It is a small, round, creamy-colored grain that is similar in appearance to quinoa and couscous. Proso has a mild, nutty flavor and a slightly crunchy texture, making it a versatile ingredient in both sweet and savory dishes.
