Pyrophosphate disodique, also known as disodium pyrophosphate, is a food ingredient commonly used as a leavening agent, emulsifier, and texturizer. It is a white, odorless powder that is water-soluble and commonly found in baked goods, instant puddings, canned seafood, and potato products. Pyrophosphate disodique works by releasing carbon dioxide gas, which helps dough or batter rise and creates a lighter texture in baked goods. It is considered safe for consumption by regulatory bodies, but should be used in moderation as excessive consumption may lead to adverse health effects.
