So, what is sel de salaison?
Sel de salaison, also known as curing salt or pink salt, is a blend of regular salt and sodium nitrite that is commonly used in the preservation of meats such as ham, bacon, and sausages. The distinctive pink color of this salt comes from the addition of sodium nitrite, which not only helps to preserve the meat but also gives it a characteristic flavor and prevents the growth of harmful bacteria. While sel de salaison is an essential ingredient in traditional charcuterie, it should be used with caution due to its high sodium and nitrite content.
