It is a combination of sodium and pyrophosphate, which work together to produce carbon dioxide gas when exposed to moisture and heat. This gas helps baked goods rise and gives them a light, fluffy texture. SAPP is also used as an emulsifier, stabilizer, and sequestrant in various processed foods, such as meat products, dairy products, and canned goods. Although SAPP is generally recognized as safe by the FDA, excessive consumption may lead to adverse health effects.
