So, what is sodium acid' pyrophosphate?
Sodium acid pyrophosphate (SAPP) is a water-soluble, white crystalline powder commonly used in the food industry as a leavening agent, emulsifier, and pH buffer. It is a synthetic compound made from the reaction of sodium carbonate, phosphoric acid, and sodium dihydrogen phosphate. SAPP is commonly used in baked goods, such as cakes, muffins, and bread, to promote carbon dioxide gas release during the baking process, resulting in a lighter, fluffier texture. It is also used in processed cheese products to prevent coagulation and in potato products to prevent discoloration.
