Sodium fumarate is a white, crystalline powder with a slightly sour taste. It is a sodium salt of fumaric acid, a naturally occurring organic acid found in various fruits and vegetables. Sodium fumarate is used as a food additive to regulate acidity and enhance the flavor of baked goods, cheese, and beverages. It is also used in the production of animal feed and pharmaceuticals. This ingredient is generally recognized as safe by regulatory agencies and has no known adverse effects on health when consumed in moderate amounts.
