So, what is sodium pyrophosphate?
Sodium pyrophosphate is a food-grade chemical compound that is commonly used as a food additive. It is a white, odorless, and crystalline powder that is highly soluble in water. Its chemical formula is Na4P2O7, and it is made by heating sodium dihydrogen phosphate to create a pyrophosphate ion. Sodium pyrophosphate is used as a sequestrant, buffering agent, and emulsifier in a wide range of processed foods, including baked goods, canned meats, and cheese products. It helps to prevent discoloration, maintain the texture of the food, and enhance its flavor. However, excessive consumption of sodium pyrophosphate may lead to health issues, such as high blood pressure and kidney damage.
