So, what is sodium triphosphate?
Sodium triphosphate is a food additive commonly used as a preservative and emulsifier in processed meats, seafood, and other packaged foods. This inorganic compound is composed of three phosphate groups and one sodium cation, and it works by binding to metal ions and interfering with bacterial growth. In addition to its functional properties, sodium triphosphate also contributes to the texture and moisture retention of food products. While generally regarded as safe by regulatory agencies, some studies have suggested potential health risks associated with high levels of consumption.
