So, what is späck?

Späck is a type of cured and smoked bacon that originated in the Alpine regions of Europe. This fatty and flavorful ingredient is made by dry-curing pork belly with a blend of salt, sugar, and spices, before smoking it over beech wood chips. The result is a deliciously smoky and slightly sweet meat that can be used in a variety of dishes, from traditional German potato salad to Italian pasta dishes. Späck's distinctive flavor and texture make it a beloved ingredient in many European cuisines, and it's increasingly popular in international cuisine as well.
