So, what is starterkultur?
Starterkultur, also known as a starter culture, is a mix of microorganisms that are added to certain foods to initiate fermentation. It typically contains bacteria, yeasts, or a combination of both, and plays a crucial role in the production of various fermented foods such as yogurt, cheese, and sourdough bread. These microorganisms consume sugars in the food and produce lactic acid, acetic acid, and other compounds that give the food its characteristic flavor and texture. The use of starterkultur ensures consistency and quality in the final product and also contributes to the preservation of the food by creating an acidic environment that inhibits the growth of harmful bacteria.
