So, what is startkultur?
Starkultur, also known as a starter culture, is a crucial ingredient in the production of various fermented foods and beverages. It consists of a carefully selected blend of microorganisms that are responsible for initiating the fermentation process. These microorganisms, which include bacteria and yeasts, convert sugars and other nutrients into lactic acid, alcohol, and other organic compounds, giving the food its characteristic tangy or sour taste, as well as enhancing its texture and aroma. Starter cultures are commonly used in the production of yogurt, cheese, sourdough bread, kimchi, sauerkraut, and many other fermented foods. Choosing the right starter culture is crucial to ensure a consistent and high-quality end product.
