So, what is traganth?
Tragacanth, also known as tragacanth gum, is a natural gum obtained from the dried sap of several species of Middle Eastern legumes, primarily Astragalus gummifer. This odorless, tasteless, and water-soluble gum is used as a thickening, stabilizing, and emulsifying agent in a wide range of food products, including ice cream, salad dressings, syrups, and confectionery. Tragacanth has the unique ability to absorb and retain water, which makes it an effective binder and viscosity enhancer. In addition to its culinary uses, tragacanth has also been used for medicinal purposes, such as treating diarrhea and sore throats. Due to its scarcity and high cost, tragacanth is often replaced by other gums, such as xanthan gum and guar gum.
