So, what is trigonella caerulea?
Trigonella caerulea, also known as blue fenugreek, is a lesser-known but highly aromatic herb. It is a member of the legume family and is native to the Eastern Mediterranean region. The plant has delicate blue flowers and produces small, curved pods containing the seeds that are used in culinary applications. Blue fenugreek has a sweet yet slightly bitter taste and a distinctive aroma reminiscent of maple syrup or burnt sugar. It is often used in spice blends, such as Ethiopian berbere or Indian panch phoron, and can add complex depth of flavor to stews, curries, and soups.
