So, what is tuk?
Tuk is a traditional ingredient in the cuisine of Central Asia, especially in Uzbekistan. It is made by rendering sheep or lamb fat until it becomes a golden brown liquid, with a distinctive nutty aroma and flavor. Tuk is often used as a cooking oil, as well as a condiment to add flavor to dishes such as plov, shurpa, and lagman. It is a high-fat ingredient that adds richness and depth to dishes, and is a key element in the bold and flavorful cuisine of the region. Tuk is also known as "sheep's tail fat" due to the cut of meat used to make it.
