So, what is vergeoise?
Vergoise is a French sugar that is made from sugar beets. This sweetener is similar to brown sugar but has a unique caramel flavor and a slightly more granular texture. The sugar is made by boiling sugar beet juice until it thickens and then crystallizes. Vergoise comes in two types: blonde and dark. The blonde vergoise is lighter in color and has a milder flavor, while the dark vergoise is a deeper brown color and has a stronger, more complex flavor profile. This sugar is often used in baking and confectionery, adding a rich, caramel-like sweetness to desserts, pastries, and sauces.
