Viande séparée mécaniquement de porc, also known as mechanically separated pork, is a meat ingredient produced by using a high-pressure process to separate the edible tissue from the bones of pork. This results in a paste-like substance that is often used as a low-cost alternative to ground pork in processed meat products such as sausages, hot dogs, and lunch meats. While mechanically separated pork is an efficient way to utilize all parts of the animal, some concerns have been raised about its safety and nutritional value, as it may contain higher levels of fat, connective tissue, and potentially harmful pathogens compared to other pork products.
