So, what is juuretis?
Juuretis, also known as sourdough starter, is a natural leavening agent used in baking to achieve a tangy flavor and a fluffy texture in bread. It is made by combining flour and water and allowing it to ferment for several days, during which wild yeasts and lactobacilli multiply and develop. These microorganisms produce lactic acid and acetic acid, which give the dough its characteristic sour taste and aroma. Juuretis is prized for its ability to enhance the nutritional value of bread by breaking down complex carbohydrates and gluten, making it easier to digest. It is also a sustainable and eco-friendly alternative to commercial yeast, as it requires only minimal resources and can be perpetuated indefinitely with regular feedings.
