So, what is mono- y diglicéridos de los ácidos grasos?
Mono- and diglycerides of fatty acids, also known as E471, are a common food additive used to improve the texture and stability of various processed foods. These compounds are derived from natural sources like vegetable oils and animal fats and are commonly used in the production of baked goods, ice cream, margarine, and other products. They function as emulsifiers, helping to mix water and oil-based ingredients, and also act as a stabilizer, preventing separation and extending shelf life. Despite some concerns over their safety, mono- and diglycerides are generally recognized as safe by regulatory agencies and are widely used in the food industry.
