So, what is y cuajo?
Y cuajo is a traditional food ingredient that has been used for centuries in Latin American cuisine. It is a natural coagulant derived from the stomachs of young ruminants, such as calves or goats, and is commonly used to make cheese. Y cuajo contains enzymes that break down milk proteins, causing the liquid to curdle and form solid cheese curds. This ingredient is highly valued for its ability to produce a rich, creamy texture and distinct flavor in cheese. It is also used in other culinary applications, such as making desserts and meat dishes. Despite the availability of alternative coagulants, y cuajo remains a popular and beloved ingredient in many traditional recipes.
We've built a vegan ingredients scanner that classifies food ingredients as "vegan", "non-vegan", or "potentially vegan".
It allows you to avoid non-vegan ingredients - just take a picture of a product's ingredient list, and the app tells you if the product is vegan or not.
