So, what is soy lecithin as?
Soy lecithin is a versatile food ingredient that is derived from soybeans. It is a natural emulsifier that is commonly used in food processing to help blend ingredients that would otherwise separate, such as oil and water. Soy lecithin is also used as a stabilizer and thickener in products like chocolate, baked goods, and salad dressings. Additionally, it can improve the texture and mouthfeel of products and increase their shelf life. Despite being derived from soybeans, soy lecithin does not contain any soy protein and is therefore safe for those with soy allergies.
