Sucroesters d'acides gras, or sucrose esters of fatty acids, are a type of food ingredient derived from sugar and fat molecules. These emulsifiers are commonly used in the food industry to stabilize and homogenize mixtures of oil and water, such as in margarine, mayonnaise, and ice cream. Sucroesters d'acides gras improve texture, increase shelf life, and enhance the mouthfeel of food products. They are considered safe for consumption by regulatory agencies and have a wide range of applications in the production of processed foods.
