So, what is angelica keiskei?
Angelica keiskei, also known as ashitaba, is a herb native to Japan that has been used for centuries in traditional medicine and cuisine. It is vibrant green in color, with a celery-like appearance, and its leaves, stems, and roots are all edible. Ashitaba is rich in vitamins and minerals, including vitamins B6, C, and E, potassium, calcium, and iron. It also contains a unique compound called chalcones, which have antibacterial, anti-inflammatory, and antioxidant properties. Ashitaba's slightly bitter flavor makes it a great addition to salads, stir-fries, and smoothies.
