So, what is carbonați de amoniu?
Carbonați de amoniu, also known as ammonium carbonate, is a white, crystalline powder with a pungent odor. It is commonly used as a leavening agent in baking, particularly in traditional European and Scandinavian recipes. When heated, carbonați de amoniu breaks down into ammonia, carbon dioxide, and water, which create tiny pockets of gas in the dough, causing it to rise and become light and fluffy. Unlike other leavening agents, carbonați de amoniu does not leave a bitter taste, making it ideal for use in delicate pastries such as Danish cookies, gingerbread, and lebkuchen. However, due to its strong odor and potential health hazards, it should be used sparingly and with caution.
