So, what is dried egg yolk?
Dried egg yolk is a powdered food ingredient produced by separating, pasteurizing, and dehydrating the yolks of poultry eggs, typically from chickens. To manufacture this ingredient, fresh eggs are mechanically cracked and separated from the whites. The liquid yolks are filtered, heat-pasteurized to eliminate pathogens like Salmonella, and then converted into a fine, shelf-stable powder through industrial spray drying.
This ingredient is widely used across the commercial food industry due to its long shelf life and consistent functional properties. It serves as an emulsifier, binding agent, thickener, and coloring agent in various processed foods. Common applications include commercial baked goods, dry cake mixes, mayonnaise, salad dressings, pasta, ice cream mixes, sauces, and confectionery.
