So, what is e1423?
E1423 is the E-number for acetylated distarch adipate, a modified food starch used primarily as a thickener, binder, and stabilizer. It is manufactured by chemically treating native starch extracted from plant sources such as maize, potato, wheat, or tapioca. The extraction yields a raw starch that is then cross-linked using adipic anhydride and esterified with acetic anhydride, creating a modified polymer that remains stable under heat, acidity, and freezing.
Food manufacturers commonly list E1423 in shelf-stable sauces, gravies, canned soups, frozen prepared meals, dessert fillings, and instant noodles to prevent separation and preserve texture. This ingredient is vegan because the starting material comes entirely from botanical crops, and the chemical agents used to modify the starch are of synthetic origin. No animal tissues, animal byproducts, or animal-derived processing aids are used during the manufacturing process, making E1423 suitable for vegans.
We've built a vegan ingredients scanner that classifies food ingredients as "vegan", "non-vegan", or "potentially vegan".
It allows you to avoid non-vegan ingredients - just take a picture of a product's ingredient list, and the app tells you if the product is vegan or not.
