So, what is acetylated di-starch glycerol?
Acetylated di-starch glycerol is a modified starch commonly used as a food thickener and stabilizer. It is created by replacing some of the hydroxyl groups in starch molecules with acetyl groups, which increases its solubility and stability under high temperatures and acidic conditions. This ingredient helps to improve texture and enhance mouthfeel in a variety of processed foods, from sauces and soups to baked goods and desserts. Acetylated di-starch glycerol is also gluten-free and can be used as a substitute for wheat-based thickeners in gluten-sensitive products.
