So, what is enfleurage?
Enfleurage is a rare and ancient technique used in perfumery and culinary arts to extract essential oils and aromas from delicate flowers, such as jasmine and tuberose. This process involves layering petals on a greased glass plate until they infuse the fat with their fragrance, then repeating the process with fresh flowers until the fat is saturated with scent. The fat is then scraped off the glass and the fragrance extracted through alcohol. Enfleurage is a time-consuming and costly process, making it a luxurious and rare ingredient used by top chefs and perfumers around the world. Its delicate floral notes make it a perfect addition to sweets, desserts, and even cocktails.
