Gellan gum is a natural, high molecular weight polysaccharide that is widely used as a thickener, stabilizer, and gelling agent in the food industry. It is produced by microbial fermentation using specific strains of bacteria, making it a vegan-friendly alternative to animal-based products like gelatin. Gellan gum has excellent thermal stability, providing consistent performance across a broad range of temperatures, and can be used in a variety of applications, including dairy products, fruit juices, sauces, and dressings. Its unique properties allow for the creation of innovative textures and shapes, such as low-fat or fat-free products with a creamy mouthfeel.
